When you use Infrastructure as Code, deployment of the API isn't any different from other parts of your infrastructure. You can use CI/CD pipelines based on AWS services (AWS CodePipeline, AWS CodeBuild, AWS CodeDeploy) or any other CI/CD tooling that you are familiar with.

AWS Serverless Application Model (SAM) can even set up those pipelines for you using AWS CodePipeline, Jenkins, Bitbucket, GitLab CI/CD, GitHub Actions

You can deploy your APIs in-place, use canary deployments as one of the API Gateway built-in features, or implement blue/green deployment using API mappings.
